Move over spinach, arugula is in town

Sauteed arugula with cheesy eggs and roasted potatoes


Arugula is not just for salads anymore!  Throw a couple of bunches of arugula into a pan with sauteed minced garlic for a couple of minutes (wait for the garlic to begin browning in a splash of olive oil first) and you have a delicious warm side dish great for summer nights.  Specky even served it along side her eggs and potatoes for breakfast.  Yum!  Thank you Chef Rossi for reminding us to try new things.
